In my opinion the knife is a post war fantasy piece.

Without a doubt. The knife may be an old Henckles (maybe a repo) but the grips are brand new. The design as Mart notes is fantasy, but you would at least expect the forger to try and "age" the grips a bit.
The signs I can't help with. Hopefully others can opine. I think they will probably want to see photos of the reverse as well.

Not sure about these metal advertising signs, but if they are all the same size and yet clearly for different products that would make me suspicious.
