I know that Osprey published a book on Belgian Army Uniforms of WWI in the last few years. Probably not all that comprehensive, given the size limitations, but it may be a good start.
They usually have a lot of information packed into those few pages.
Also, the old Funcken uniform books of the 1970's, all in color, have good Belgian coverage for the period.
