Got this in a lot to an officer, KIA on the eastern front 26.09.1941. Would it be possible to tell if it's an EM/NCO cap, or officer?

It is a nice private purchase cap. Most likely an Officer's cap, if you got it in a group of items.

Came with an NCO waffenrock, M27 Reichsheer service tunic, diary and officer chin cord.
Was told it was an NCO cap, but didn't look that way to me.
It could be. The thing is Enlisted men and NCO's could buy any quality cap they wanted. All up to how much they wanted to spend. You could display it with either tunic.

Hat is definitely private-purchase, and was made by Schellenberg.
Are there any "Gepruft" stamps under the sweatband?

No "Gepruft" stamp anywhere on the cap. Waffenrock is private purchase, no staps in that one either.
