I have this gravity knife for sale here:

Luftwaffe Gravity Knife Non-Takedown - Militaria Collectibles buy - sell at War Relics

Can someone tell me more about this specific one? I notice the markings are slightly different. What do the numbers mean? Why is the stamp on the blade different from the oval ones I see elsewhere?

I believe this is a legitimate maker's mark for SMF. This mark is etched, not stamped. You will probably find a few different markings for these.
    Hope this helps,
    Ralph.

I wonder what the different etchings mean on the blade. Does this mean it was made at a certain factory at a certain time period?

The knife is fine. The markings are the makers trademark for SMF "Solinger Metallwaffenfabrik" and "Rust Free" (Stainless steel) the Luftwaffe inspection stamps.
