I am curious to know if the Amon that appears in this 1939 passport is the same Amon Göth?
Of course not. Why should he sign an official document with his first name?
(Also, the handwriting is different.)

Err... Nobody said Göth was in the photograph of the passport holder; the subject was the signature of the official who signed it at the bottom of the page.

That's because the Polish police- or prison officials who took this mugshot surely didn't have umlauts in their letter case.
If umlauts are unavailable for technical reasons, they can be substituted by the basic vowel plus an "e": ä = ae, ö = oe, ü = ue.

Small world that the man known as a monster with that name can cause confusion in identity. Incredible !
