Greetings Marc,
We would call the stamp (In this case the letter “C”) an acceptance stamp, it’s known as a “fraktur” mark. It indicates that the item so stamped was accepted by an official inspector as meeting the minimal acceptance standards for the vendor/manufacturer/contractor to receive full payment from the Imperial German Government. Nice knife, thanks for sharing it with us.
Regards,
Lance

Nice find Marc.
I would like one to display with my butcher bayonets
and my 1918 US trench knife.
