As the title says, what does it mean? First I thought it mean the ww1 German stahlhelms in general, but then I saw it often like ''M18 Droopbill DD'' and so on. Im confused and didn't find any answer by googleing.

It's a particular type of M18 style helmet produced in the inter-war years. At a glance it is a WW1 shell but the vent lugs are slightly different, as well as the overall shape of the lid. The visor is the part that gives the helmet it's name, having a downward sloping angle rather than running parallel to the base of the skirt as in WW1 helmets.
The "Droopbill" refers to the front of the helmet. The part which forms the visor over the eyes. Instead of being straight like all others, these variants have a visor which slopes downwards.

Variants, good point Ade. My post might be a bit misleading, there are M34 versions as well as the M18 style, possibly other private purchase stuff too.
