Here's a demonstration video of army saluting practices from 1940 onwards. It's in Japanese only, but explains in minute detail all possible saluting variations to match the situation, like in-door vs out-door salutes, when saluting multiple superiors, the 15 degree bow vs the 45 degree bow, salutes in quick strides.
Don't try to learn all this, as you won't be able to enjoy movies anymore with already tanks, guns and uniforms to complain about.

Well a lot of this apart from the bowing is old style Prussian, and other 19thC armies, and the sword salute is still done on the fencing piste. Why did the one guy get smacked around the head?

That would be over the soldier's infraction concerning contents of his personal valuables bag. He obviously got caught in a spot check of his kit.
