Truth be told, I don't know the first thing about antique cutlery and its markings, but my guess would be that "Vers." stands for "Versilbert" [silver-plated].

The "90" stamp indicated silver plate rather than solid silver, so this raises a flag in my eyes. I can't imagine a self-important little prig like Himmler and his personal staff using anything but solid silver.
